Chocolate Mousse with Stevia Recipe:

You’ll need just a few ingredients for this recipe, and here they are:

1)      125ml water

2)      4 sheafs of Gelatine leaves (around 6.6 grams)

3)      4 medium eggs; be sure to separate the egg whites and yolks

4)      2 ½ tablespoons of unsweetened cocoa powder

For Stevia, you can use either its powder form or liquid form. If you’re using the powder form, dissolve 2-3 knife tips of it in a tablespoon of hot water. When you go for the liquid form, there’s actually a Stevia chocolate liquid sweetener available, resulting in a chocolatier mousse. Use about ¼ tablespoon of these Stevia chocolate drops. A small amount of Stevia in whichever form can go a long way, so it’s really a matter of trial and error when using it to cook or bake something. Don’t be afraid to experiment with how much Stevia to put in, but as a general rule, it’s better to start with a small quantity. After all, it’s easier to add more Stevia than to end up with an overly sweet dish.

What to do

First, soak the gelatine leaves in 125ml water until they turn into jelly.

While waiting for your jelly, mix the egg whites until soft peaks are formed. As for the yolks, separately beat them at high speed.

When the gelatine leaves are already in jelly form, pour the jelly into a kitchen bowl that’s meant for a water bath. Melt the jelly with water. Slowly add the cocoa and mix it until you have a smooth fluid. Just be sure not to overheat the jelly mix; it’s advisable to remove the heat once the jelly has melted.

Combine the jelly-cocoa-water mix, the egg mix, and Stevia. Mix them at medium speed until you get an even-colored mixture. Be sure that they are combined well.

You can now pour the mixture into a serving bowl or serving cups if you’re sharing the mousse with others. This results in around six servings.

Place the mixture in your fridge to cool and set. This takes around 30 minutes to an hour. You can now enjoy your sugar-free chocolate mousse!
